So during the regular family and friends birthdays, we all play our little parts. There's the "first-on-the-dance-floor", the "gatherer", the "professional mingler" or even the "photographer". The role of cakecutter has always been thrust upon me. I don't know if it is because I'm good with a knife or talented with portioning. I have simply always been given the job to serve the cake.

Little did I know that I should have been charging a fee this whole time.

Wedding cakes are pricey pricey things at a few dollars a piece. For even a hundred guest wedding, it is no joke. However, when putting the cake cost in your budget, don't forget about the cakecutting cost. Yes, certain venues will charge a fee for cutting a cake - sometimes at another few dollars a piece. However, some venues have certain agreements with select bakeries and will sometimes void that cost. Ask this during your meeting with the caterer or the venue. Vancouver venues charge anywhere up to 7 dollars to cut and serve the cake - sometimes the cost may include a garnish of fruit or cream. Think of it as a bottle-opening fee at any other restaurant.

At 5 dollars apiece simply to cut the cake, your cake could come up to twice what you had anticipated.


Speeches: How Embarrassing Do You Want It?

The typical wedding speech is this. Heartwarming to the bride and the groom. Sometimes friends and family will insert some inside jokes that leave all guests confused. Often the speaker will inspire a few awkward laughs with an intentionally exaggerated humiliating story.

This is important. That is, the level of humiliation is exceptionally important. The story cannot be inappropriate - children and grandma friendly please. Laughs cannot be at the expense of anyone other than the couple.

Humour is ... a skill and a talent. Not everyone has it.

Back to the typical characteristics, they always go on far too long and you always have a merry band of people having something to say.

To prevent upset aunts from feeling left out, figure out who have made an impact in your life - related to the relationship or not. Everything you have experienced in your life has influenced the person you are today and that can always be related back to the relationship.

1) Figure that list of people out and then one topic they can speak about that will related themselves to you and your relationship.

2) Invite all your chosen speakers out on a lunch date individually and ask them would they be comfortable with speaking at your wedding. Remember to thank them and remind them of have much of an impact they have had on your life.

This meeting will ensure what they speak about is focused right from the beginning. Should you wait and tell them you want them to speak ... and then then tell them what you want them to speak about - you are sopping their creative juices ... in a bad way.

They are speaking publicly at your once-in-a-lifetime event. For your sake, please do not irritate them.

2011 Wedding Colours

The Wedding theme colour is always a hugely crucial aspect of any wedding. It is chosen so early in the game. Bridesmaid dresses have to be found, flowers chosen, invitations printed, and of course, all the decor selection. It is the first thing that hits any guests over the head in terms of style. Whether or not the colour compliments the bride's complexion is always an issue. You are already wearing white (or red  - for many cultures) - hard colour to wear but there is no real way to get around that.

The 2011 wedding colour trends

Apple green, mauve, lilac, hot pink, slate grey, celadon (a pale, sea foam), aged gold, coral, red, violet, mocha / chocolate / brown, navy, emerald / pine green / dark cyan, clementine orange, and yellow. (Michelle Mospens)
Your complexion and what works with you

Skin is pale and porcelain white, yellowish-olive, or dark.

- For example, brunettes with deeply coloured eyes or some natural white-blondes
- Many Asians and African Americans also have blue or pink undertones

Choose
Hues that are sharp, stark and clear say intense, rich colours, like black, navy, red and hot pink. Yellow would be another great lighter choice.

Do not choose
Earthy tones like the browns, clementine orange and gold.

Skin is pale and pink.

- For example, natural blondes
- Pale-skinned brunettes with pale eyes.

Choose
Soft neutrals and pastels, and muted colours with cool undertones like the lilac, mauve, slate grey and even pale yellow.

Do not choose
Intense, vivid hues and earth tones like the hot pink, pine green, browns, blacks, and clementine orange.

Pale peach, golden beige or golden brown skin.

- For example, redheads and brunettes with golden brown eyes
- And maybe golden blonde and black hair colouring

Choose
Rich golden, spicy and earthy colours and also both muted and rich warm colours seen in autumn leaves and spice colours like the browns, dark cyan, violet, red and aged gold.

Do not choose
Clear, bright colours and black and white and pastels and blue tones such as apple green, hot pink, emerald, slate grey and celadon.

Creamy white or peach skin; light, ivory skin colour.


- For example, natural golden blondes, auburn, or strawberry blond redheads
- Clear, light blue and green coloured eyes
- And for some, freckles and rosy cheeks.

Choose
Soft colours, such as apple green, aged gold, lilac, emerald, pine green, red, and coral.
Can wear an ivory wedding dress or cream - but ivory would do incredibly well.

Do Not Choose

Black and stay away - as much as possible - from stark white. Go for an ivory or cream coloured wedding dress.

Then again, there are always exceptions in every category. Consult your makeup artist as they would have great insight. Regardless of trends, recent prints still opt for the more “feminine colours” with the pinks and the soft purples. Some times, it seems brides select less “unique” colours so they would not limit themselves with other materials such as napkins. Speak with your suppliers for invitations and decor first as selection these days are vast and you could just be limiting yourself if you choose your colour right off the bat. Vera Wang is bringing black back and coral seems to be a popular choice. Should coral be too orange for you, try pomegranate. It’s more on the pink side should you want something daring but fear going all the way.


The Sprinkler: Be Innovative for Your First Dance

A couples first dance at a wedding has always be a highlight and a special moment. While you are enjoying that extremely public moment, it feels as if you are the only two people in the world. Although the first dance has always been a heartwarming, touching and even formal moment. Recently, couples have been putting far more thought into that dance. That is, it is now seen as a part of the wedding entertainment. So much so that many are opting for first dance lessons. I recall a while back a great wedding dance video had a couple slow-dancing to a beautiful ballad and then breaking off onto a choreographed spunky dance. I think the song was Can't Touch This - MC Hammer.

Admit it. The slow dance is really for you and your family. What everyone else wants to see is you two having some fun ... gett'in groovy. It could be a choreographed routine or (for us less graceful individuals) a routine you two have put together equipped with awkward ... nay awesome dance moves such as the atm, the sprinkler or the shopping cart. Or if it is a dance you may have done in high school for the talent show with your closest friends. It is a bonus when close friends know the dance they jump in with vigor. As opposed to the awkward trickle of couple who eventually fill the dance floor. It's your wedding, the spotlight is on you. This is not embarrassing, this makes you creative, exciting and fun. For some reason, some people believe that such amazing dance moves have apparently been deem silly and embarrassing. They are not.

For many, dancing throughout your life comes in stages:

Child to ... younger teenage years - cute dance moves, funny dances moves

Teenage years to older "of-age" club-going years - there is really nothing but bumping and grinding

Anytime after - too old to shimmy with the "young'uns" and sit out until you can do the slow dances.

I hope those stages were completely fabricated by me. But if they were not ... dance like you dance in your room; show how you prance around in the shower. Let your guests feel how much fun you are having. Think about what your love is about. If you are constantly having fun, goofing around and apt to busting out those amazing dance moves, then why on earth would you limit your first dance to junior high slow dancing?

Me? I say the chicken dance is the winner.

Planning on Eloping?

Eloping originates from the act of "running away from ones parents to marry a lover". Now this was back when marriages were often arranged by families. Today in most of Westernized world and cultures this can be considered archaic and unnatural.

Well ... because nowadays when your mother hates the boy you are with, she just makes snide remarks at the dinner table.

One of my closest friends have made a life decision to elope as well. Whether she will or will not follow through, my money is on the latter. But hypothetically, should you wish to elope what certain wedding services would still cater to you? This is assuming you still have set aside a budget for your "wedding". The average Canadian wedding costs approximately $20,000-30,000. You can save up half of just that amount and still be able to truly have a dream wedding - with far less financial stress.

Assuming that the modernized act of eloping involves the act of marriage without a reception or partying with friends and family. Often times, this decision alone saves copious amounts of money. Whether you are eloping for financial reasons, or you simply cannot deal with your college fraternity cohorts mingling with your Auntie Jane don't skimp on your wedding experience.

The dress. If you have made the decision to have a dress then the decision to elope has no effect on the budget. Dresses range from several hundred dollars to several thousand. If you plan on eloping with a running start, then maybe choose a short dress - no ruching for you.

Invitations will not be needed - just write a cute post-it note for your fiance. "Meet me in Disneyland - love you dearly" Check.

Don't bother with catering - just splurge on the most fantastic meal you want.(Lasagna packed from home? Or a grilled rib-eye from the Frontera Grill.) Check.

Photography - do it. What other opportunity are you going to be able to look so happy and amazing? Really? Just do it. But mainly do it so when your family is set on murdering you ... you can use this as a shield. As well, book Urban Wed and Urban Vid and we will be sure no one from your family is notified. Everything will be on the hush hush ... or as they say, on the "down low". You have my word.

Destination, that's how they did it in the olden days. Have a destination wedding. You have already saved on paying for everyone else ... choose somewhere you really have always wanted to go. Whether it's the Disneyland in Paris or Whistler - you are with the one you love, why not make another dream come true?

Eloping is the purest form of matrimony. It brings you back to the main focus of what you are doing. Two people choosing to spend the rest of their lives together. If it is the choice for you, go for it. But don't deprive yourself of the wedding luxuries you may or may not have secretly dreamed of.

Omelette Bar for the Wedding? Anyone?

Unless you are having a brunch reception this option seems highly unlikely. However, having tableside service similar to that of an omelette bar can be a viable option if you have chosen to have a buffet. Buffets involve a lot of staff regardless; having one or two chefs serve table side actually doesn't make that great of a price difference. During any buffet, I get excited when I see an omelette bar. I know that I will at the very least have something made-to-order and - perhaps most importantly - hot.

Ask your caterer whether they offer such tableside service and consider having a crepe bar for dessert. Chances are, many catering companies offer such service. Dessert assortments are oddly expensive. Consider flambe options and this can actually make a positive difference to your budget. I'm not talking about a steak Diane. Rather than having a spread of tarts and an assortment of cakes, focus on the dessert bar - there are so many options for setting fruit on fire.

Mangoes and tequila for Mangoes Diablo

Peaches and whisky for Pêches Louis

Cherries and Kirschwasser for Cherries Jubilee

Serve everything over some ice cream. This way, guests are entertained and happy about having a freshly made dessert as opposed to a dessert table they may just graze over. Having several variations of the same dessert makes the menu more focused. If you are concerned with having a huge lineup consider this: after a great meal whether it was buffet or plated, people are dragging their feet to have dessert. They may seem excited, but it really is just an initial surprise and excitement and really only two items out of a "dessert assortment" is really ever delicious. People have a sneaky caveman instinct when it comes to getting at a buffet line. The natural behaviour is that a healthy line will build anticipation and those with patience will wait until the line dies down a tad.

Having custom food services is becoming a growing trend. With mobile coffee carts and even a hot dog stand! People are growing wary of the chafing dish. Thinking about your reception? Consider an omelette bar, or burning something other than your food budget.


Keeping Your Wedding Reception Seasonal

We know that summer wedding season is now upon us and many catering options have already been set. You know that your reception is limited by budget, tastes and availability.
We've chatted about what choices would make buffets and plated dinners better choices for your wedding but what does availability and seasonality mean? It pretty much means, what is being grown close during the time of your wedding. Having a wedding in BC pretty much means we have access to fresh seafood and produce year-round. However, people are in the mood for different foods during the summer and the colder months.


Fall and Winter Weddings

Vancouver doesn't have winters as harsh as those of Toronto but it still gets cold. When the weather gets cold, guests are opting for soups and earthier ingredients like root vegetables or mushrooms. Soup makes serving easy and it has a greater chance of staying hot for the guests. A great cocktail appetizer is shots of soup. Great for adding a touch of warmth and care for the guests. Roasting also becomes more common fare for the main course. Think of roasting chicken or beef, pork could be a less expensive option. Turkey ... is possible, but I find it a bit awkward if I can confuse Thanksgiving dinner with a wedding reception. Pasta dishes are also an obvious choice. For dessert, it's apple season = use them. Baking apple holds up extremely well in a chafing dish. Offer apple crumble with ice cream. Dessert is great, no one even cares if your third uncle gave a really boring toast. These options are cost-efficient and filling and it won't look like you're trying to fill everyone up with mashed potatoes. My favourite  vegetable option has always been ratatouille. No, not simply because of the heartwarming movie. But because it’s freaking delicious. It’s a bunch of sliced veggies with a great tomato sauce. Eggplant parmesan is  also amazing. Never hesitate to put cheese into something. Have mashed sweet potatoes, people usually miss that it was still just a whole lot of starchy goodness.

Summer Weddings


are a bit trickier. It's wedding season, so your venue or caterer is already not tripping over for your business. As well, people are less likely to be tricked into filling up on breads and potatoes. People expect seafood and salads and when I say salad they don't want a Caesar. They're hoping for something with bay scallops tossed in. I know. Geez. Wedding guests are picky. Aren't they just supposed to be happy for you? Dress salads up with citrus fruits and candied nuts (side note, pecans baked with maple syrup). Trick the average guest with tons of colour. People eat with their eyes first and if they're being negative about the food spread while they're waiting in line for it - that's depressing and consequently ... no good. Strawberries have gotten really inexpensive and beautiful in the recent years. Use it in the salads and the desserts. For the main course, because people are looking to eat lighter, they are more hungry for fish and shellfish. Head to Granville Island and chat up the seafood experts. Find out what is cheaper  and then speak with your caterer about what is better and more appropriate in bulk. Throw a few chicken dishes and cold pasta options.

Relax, it’s wedding season, people will be full of wedding food already. Pick your battles, forget trying to score points with the food. Just splurge on the dress.


Boys: Here's Something She Really Wish You Knew

During a relationship, there are books of things she wishes you would know. But for the proposal, the anticipation and excitement that builds just as much that of the Wedding.

Here's something they probably don't want him to know:

If the girl was going to say "yes", there's no girl out there who would say "no" simply because the proposal was an unoriginal or even a horrible one.

So boys, should really stop sweating about whether she will say yes. If the answer is a no, it's not because of the proposal.

However, it's one of those magical moments. Maybe even more than the Wedding, there is so much anticipation and excitement for the to-be-bride because pressure is off. This is where you are expected to make the effort.

The problem is this, most boys are overtired and overstressed about having figured out that they are completely sure that this is the girl of their dreams. That this is the one person they are meant to be with for the rest of the life. After they have declared this, they usually simply stop at she will be happy enough with the act of love nothing else will matter.

Yes. I guess that is true. For say ... 2 weeks?

You've spent enough time figuring out that you want to be with her. Put in the extra few days to plan the thing out, so that when she replays the moment time and time again for the next year she will remember that you really gave a damn. Really, you don't want to be hassled for the next fifty years of your life. Just do it right.

So how should you go about it? Who is she? What makes you love her. Why are you making this choice? If you don't know. You have bigger problems. Is she someone who loves surprises? Or will she be so freaked out you need to corner her? (Some girls have an instinct to run when they are overwhelmed.) Is a stuffy candlelit dinner really what she wants. Does she like public announcements? Or is she more private? Will she think it's adorable that you completely jacked a proposal idea from the most generic chick flick? Or will she appreciate that you remembered that favourite movie?

Figure it out. Make the effort. Trust me. It makes a difference. It's not going the extra mile. You already ran the race, and you say that you're up for the marathon; just don't trip over the finish line.

Wedding Party Team Romances The Run

Wayne Kennett loves the Sun Run so much, he couldn't face missing it for his honeymoon, so the irrepressibly cheerful Richmond man has got his wedding party in on the act.

Kennett and his fiance, Bonnie Eng, will get married on May 8, and the very next day, they -- and their wedding party -- will be running the Sun Run.

"I've been doing the Sun Run myself for 14-15 years now," Kennett said. "When it moved to May 9, I begged and pleaded with my fiance. I wasn't about to miss it."

Wouldn't it be kind of neat if they could get the wedding party to run with them, he pleaded.

Either Kennett is really persuasive, or Eng is a Sun Run fan too, because she agreed to the madcap plan.

So Eng's best friend Anita and her husband Kevin, Kennett's best friend Judy, Judy's partner and half a dozen other friends and family will be on the wedding party team.

"I have a bit of a competition with the maid of honour's husband," said Kennett, whose best Sun Run time is 50 minutes. "He seems to think he's going to do better than me." The couple, both 37, met online 2½ years ago. Kennett works for the Canada Line. Bonnie works for the City of Vancouver.

"We were initially going to be leaving for our honeymoon on the Sunday," Kennett said. "When we found out the Sun Run was that day, we pushed it to the Monday."

The wedding will be at the Stanley Park Pavilion. The newlywed couple will honeymoon along the Oregon coast.
